Here is the recipe of the cake that I made for my little girl’s 1st birthday. We posted pics on facebook. This recipe can be done as a cake or brownies. Hope you enjoy. Feel free to post any pics on our facebook page. We would be delighted to see some of your creations

225g 70% Dark chocolate finely chopped or Cacao powder
170g coconut sugar
1 Teaspoon vanilla extract
100g Ground almonds
6 Large eggs, separated
Ingredients for frosting
1 perfectly ripe avocado
1/2 cup cacao powder
1/2 cup of maple syrup or agave
Instructions for cake/brownies
Preheat the oven to 180°C (350°F), Gas Mark 4 and line baking tin with baking parchment. For the cake/brownies, melt the chocolate and butter in a large heatproof bowl sitting over a saucepan of barely simmering water. Remove the bowl from the heat and mix in the coconut sugar, vanilla extract and ground almonds with a spatula. Stir through the egg yolks, one at a time, mixing after each addition, until you have a thick batter. Put the egg whites in a food mixer (or I use an electric hand-held mixer in a bowl) and whisk the egg whites until stiff peaks form. Add the egg whites to the chocolate batter and fold through gently until just combined. Pour the cake/brownie batter into the prepared baking tin and place in the oven to bake for about 30 minutes until it is firm but with a slight wobble. Remove the cake/brownies from the oven and allow to cool. Half the cake and spread some of the frosting on one half and then placed the top half back on. Then add the frosting all over.
Instructions for frosting
Place all three ingredients in a food processor (I use my nutribullet) and mix together, stopping to scrape down the sides once or twice. The frosting is ready to spread immediately but you can refrigerate if you think it needs to firm up. Add a little water if it is too thick.
